Inspired by his lifelong connection to the British coastline, Hugh Lambert set out to bring the essence of the shore to drinkers everywhere. Growing up by the sea in Dorset, a region celebrated for its rugged beauty and rich maritime heritage, Hugh always felt a magnetic pull to the coastline. With 25 years of experience as a TV cameraman traveling the world on food and drink programs, it wasn’t until a chance collaboration with renowned food writer Roger Phillips that Hugh discovered the incredible potential of seaweed as a key ingredient in craft spirits. This revelation sparked the creation of a spirit that blends the delicate art of distilling with the bold, earthy flavors of the ocean.
What began as a passion for seaweed evolved into the development of a completely new category of botanical vodka. Inspired by the nuanced flavours of gin but crafted to appeal to vodka lovers, Hugh embarked on a journey to capture the umami-rich qualities of seaweed in a spirit. After years of experimenting with and selecting the finest seaweeds, he combined them with complementary flavours often found in Asian cuisine, perfecting a vodka that’s as complex as it is refreshing. Using precision vacuum distillation, the botanicals are expertly extracted to preserve their delicate flavours, setting the vodka apart from traditional methods. Each bottle is then blended by hand and cut to 40% ABV with pure water, re-mineralised with a touch of Dorset sea salt, resulting in a smooth, flavourful vodka that transports the drinker straight to the sea.
